food poll

So I'm cooking for my church (again) and am interested in hearing thoughts about the menu. I've got about the same budget as before, though I'm never cooking roasted red pepper soup for 40 again. I'd like to keep the whole thing a little simpler than dishes I have to (a) keep a really close eye on, and (b) spend 6 hours rotating peppers on roasting trays in the oven...

If you have any suggestions that would fly with a wide variety of people (i.e., no fish), please post 'em in the comments!

I would have to say a nice white chicken chili betty crocker has a great recipe. I think it also asks for a dab of sour cream diced tomato and tortila chips on the side. I like it, you can get many batches working at once and it is so good. I suggest adding some corn to the mix to add some sweetness

Man, I LOVE white chili.
I use the recipe from the crock pot book, but I zest it up more with a LOT of jalapeno and chicken gravy instead of chicken broth.

This is more personal taste, but I also load it full of onions and garlic. Man that's good chili. The only thing I *can't* do is get a nice, thick consistency out of it. It's not *supposed* to be too thick, but I like white chili that's thicker than normal.
